Ingredients

2 cups
water
500 ml
1 cup
fresh or frozen strawberries, trimmed and sliced
250 ml
1 cup
fresh or frozen rhubarb, sliced
250 ml
1 cup
sugar
250 ml
Zest and juice of 2 lemons
1 tsp.
vanilla essence (optional)
5 ml

Directions

Step 1
In a saucepan, bring all the ingredients to a boil, except the vanilla essence. Reduce heat and simmer for about five minutes, or until the sugar has dissolved. Let cool.
Step 2
Puree the mixture in a food processor. Stir in the vanilla and mix with a spoon. Pour the mixture into a Pyrex dish large enough to have a thickness of liquid of about two inches. Place in the freezer for 24 hours. When the mixture is iced, scrape with a fork.
Step 3
Divide into glasses and serve.

Tips

For an alcoholic version, add a dash of vodka to each glass when serving.
