Cortland apples, peeled, cored and diced (see note)

Directions

Step 1
Preheat half of the grill, setting the burners to medium.
Step 2
In a bowl, combine the apples with 6 tbsp (80 g) of the brown sugar, the lemon juice and cornstarch. Mix well. Spread the mixture out in an 8-inch (20 cm) square disposable foil dish.
Step 3
In the same bowl, combine the remaining brown sugar with the butter, oats, flour and salt just until the dry ingredients are moistened and the mixture clumps together when pressed with your fingertips. Spread over the apple mixture.
Step 4
Place the crisp on the side of the barbecue that is off. Close the lid of the barbecue. Bake for 40 to 50 minutes or until the topping is golden and the apples are cooked through, maintaining the barbecue temperature at 375°F (190°C). Let cool for 30 minutes before serving.

Tips

A mixture of apples that hold up well to cooking, such as Cortland, and softer apples, such as McIntosh, will help achieve the ideal texture for an apple crisp.
