After an adrenaline-filled day
Easier to make than you would think, mulled wine is the perfect drink to cozy up to after a day spent on the slopes. A.k.a. winter sangria, this drink is a favourite for its fruity and spicy aromas offering up all the heat you need after enjoying the ultimate board sport fun! Chef’s tip: Choose a red wine with red and black berry aromas that will come out when heated.Mulled wine for 4 to 6 people:
750 mL (3 cups) red wine ● 30 mL (2 tbsp.) brown sugar ● 30 mL (2 tbsp.) finely chopped fresh ginger ● 1 cinnamon stick ● 4 cloves ● 3 star anise flowers ● 3 cardamom pods ● 1 sliced orange- Combine all ingredients in a large saucepan.
- Heat mixture over medium-low heat for about 15 minutes, without bringing to a boil.
- Using a sieve, filter mulled wine directly into cups and serve warm.
For little runny noses
When kids come in from the cold out of breath after running and playing in the snow, there’s only one thing they’re hoping for: a delicious hot chocolate to warm up their little hands and fill up on comfort. Chef’s tip: Prepare little marshmallow skewers that children will love to watch melt before they greedily gobble them up.Hot chocolate for 4 people:
750 mL (3 cups) milk ● 250 mL (1 cup) 35 % M. F. whipping cream ● 60 mL (¼ cup) maple syrup ● 15 mL (1 tbsp.) cocoa powder ● 6 unsweetened chocolate baking squares, chopped- In a saucepan, heat milk, cream, maple syrup and cocoa powder just until simmering.
- Pour warm milk mixture over chocolate in a bowl and whisk to combine.
- Divide hot chocolate into four mugs and top with whipped cream, if desired.
After hiking in the wilderness
Chai tea latte is a favourite for its gentle warmth on cold days. After a day spent snowshoeing, it’s a welcome blast of heat! Chef’s tip: If chai tea is a bit too spicy for you, feel free to replace it with your favourite tea and mix up the spices!Chai tea latte for 1 person:
1 bag bold chai tea ● 125 mL (½ cup) boiling water ● 125 mL (½ cup) skim milk ● 2 mL (½ tsp.) sugar ● 1 pinch ground cinnamon- Steep tea bag in boiling water for 5 minutes. Remove bag, strain, and discard.
- Heat skim milk in a microwaveable cup on high for 1 minute. Use a milk frother or whisk to whip milk until frothy.
- Stir sugar into steeped tea. Pour frothy milk over tea and sprinkle with cinnamon.
For a dose of comfort
When it’s too cold to step foot outdoors and you just want to enjoy the warmth of a fireplace, there’s nothing like pairing the moment with a delicious cup of coffee! For a flavourful boost of energy, add a dash of maple syrup. Chef’s tip: If you’re feeling adventurous, enhance your coffee’s flavour with a dose of Amaretto, Grand Marnier or Irish Cream!Maple latte for 1 person:
150 mL (⅔ cup) milk ● 250 mL (1 cup) 35% M. F. whipping cream ● 60 mL (¼ cup) maple syrup ● 1 espresso shot, prepared- Heat milk in microwave or using an electric milk frother.
- In a bowl, combine cold whipping cream and maple syrup. Whisk mixture in electric mixer on high for 1 minute, or until obtaining desired consistency.
- Pour espresso into a large cup; then add milk. Using a spoon or piping bag, top with whipped cream.
