Directions
- Step 1
- For the mashed potatoes: Place the potatoes in a pot of salted water and cook until tender, approximately 20 to 25 minutes. Using a potato masher, mash the potatoes with the butter and milk. Season with salt and pepper. Keep warm.
- Step 2
- Preheat oven to 200°C (400°F).
- Step 3
- For the bacon and turkey meatballs: Combine all the ingredients in a large bowl. Season with salt and pepper. Form meatballs with approximately 30 ml (2 tbsp.) of the mixture each. Place meatballs on a baking sheet lined with parchment paper. Drizzle with olive oil. Cook in the oven for approximately 25 minutes, or until golden, turning at the halfway point. Set aside.
- Step 4
- For the gravy: In a saucepan, heat the butter over medium heat. Sweat out the shallot and garlic. Add the thyme and flour and continue cooking for 5 minutes over medium-high heat, or until mixture is hazel in colour. Add the broth and continue cooking until sauce thickens, whisking the whole time. Season with salt and pepper.
- Step 5
- For the seasoned herbs: Combine all the ingredients and set aside.
- Step 6
- Serve the meatballs on a bed of mashed potatoes and drizzle with gravy. Top with seasoned herbs.
