Directions
- Step 1
- Preheat grill to medium.
- Step 2
- Toss ribs with olive oil, garlic, rosemary, salt, and pepper.
- Step 3
- Make 2 foil packs using double sheets of heavy-duty foil for each pack (sheets need to be large enough to wrap around ribs, apples, and onions).
- Step 4
- In the centre of each sheet, place half the sliced apples and onions and cover with half the ribs.
- Step 5
- Double-fold sides and tops of foil edges to seal packs, leaving room for heat to circulate inside.
- Step 6
- Place packs on grill and cook for 50 to 60 minutes, or until ribs are tender.
- Step 7
- Remove ribs from foil packs and set aside apple mixture.
- Step 8
- Return ribs directly to the grill and cook for another 10 minutes, turning and basting with barbecue sauce.
- Step 9
- In a food processor, purée apple mixture until almost smooth.
- Step 10
- Serve mixture as a dipping sauce for ribs.
