Heat 15 mL (1 tbsp.) oil over medium-high heat in a large ovenproof skillet with a lid. Season meat with salt and pepper. Brown beef on both sides for 5 to 6 minutes, then transfer to a plate.

Pour remaining oil into skillet. Add mushrooms and onion and cook 8 minutes or until golden. Add tomato paste, stir, and cook for 1 minute. Pour in broth and stir. Bring to a boil. Put meat back in skillet along with drippings from plate.
Step 3
Cover and bake at 190°C (375 °F) for 30 to 45 minutes or until meat is tender. Remove from heat. Mix in sour cream and chives. Serve over cooked pasta.
