Ingredients

1/2 cup
your choice of chickpeas or cooked pasta

cherry tomatoes, halved
2 tbsp.
feta cheese, cubed
30 mL
2 tbsp.
assorted bell peppers, chopped small
30 mL
1/4 cup
cucumber, cubed
60 mL
1 tbsp.
red onion, finely minced
15 mL
Fresh mint, chopped (to taste)
Dressing of your choice

Directions

Step 1
In a Mason jar, layer the various toppings, starting with the chickpeas or cooked pasta, then add the feta cheese, peppers, red onion, cherry tomatoes, cucumber and mint.
Step 2
Add dressing and enjoy.
